Pan-fried Potato Salad

Serves 4

5 medium red potatoes

8 slices bacon (chopped)

2 cloves garlic (minced)

˝ medium yellow onion (chopped)

2 tablespoons finely chopped fresh dill

1 teaspoon salt

Freshly ground black pepper (to taste)

 

  1. Place potatoes in a pot or large saucepan. Completely cover with water. Add salt. Bring to a boil. Reduce heat and simmer until tender. Drain. Allow to cool.
  2. In a large frying pan (or skillet), cook bacon until fat is rendered and bacon is crisp. Remove bacon from pan and set aside. Reserve bacon fat.
  3. Dice potatoes. Place in pan of bacon fat. Add onion and garlic. Sauté for a few minutes until onion is just tender and potatoes are lightly browned.
  4. In a large bowl, combine potato mixture and bacon. Add dill. Season with freshly ground black pepper. Gently toss well to combine. Serve warm.
