South of the Border Pasta Salad Serves 6 1 pound rotelle (wagon wheel shaped) pasta 4 quarts water 2 tablespoons olive oil 1½ tablespoons salt ½ medium yellow onion (chopped) ½ red bell pepper (chopped) ½ green bell pepper (chopped) 2 cloves garlic (minced) 3 tablespoons finely chopped cilantro ½ cup pimiento-stuffed green olives (halved) 1 cup canned whole kernel corn (drained) 1 cup canned black beans (drained and rinsed) ¾ cup extra virgin olive oil ½ cup white wine vinegar 1 teaspoon crushed red pepper flakes ¼ teaspoon cayenne pepper 1 teaspoon red pepper sauce (Tabasco) Salt and pepper (to taste)
