Creamy Mushrooms

Serves 6-8

2 pounds white mushrooms (sliced)

½ medium yellow onion (chopped)

2 stalks celery (chopped)

½ cup coarsely chopped fresh flat-leaf parsley

2-3 bay leaves

½ cup chicken broth

½ cup heavy cream

1 teaspoon all-purpose flour

Salt and pepper (to taste)

 

  1. In a large saucepan, combine mushrooms, onion, celery, parsley, bay leaves, and chicken broth. Place over medium-high heat and cook slightly covered, stirring occasionally, for approximately 20 minutes.
  2. Stir in cream and flour. Remove from heat. Discard bay leaves. Season with salt and pepper to taste. Serve warm.
