Creamy Garlic-Rosemary Mashed Potatoes

Serves 4-6

4 pounds new red potatoes (peeled and quartered)

¼ cup heavy cream  

2 tablespoons extra virgin olive oil

2 cloves garlic minced

1 tablespoon finely chopped fresh rosemary

Salt and white pepper (to taste)

 

  1. Place potatoes in a pot and completely cover with water. Simmer over medium-high heat until tender. Drain.
  2. Using a food mill, puree potatoes. Stir in cream, olive oil, garlic, and rosemary. Season with salt and white pepper to taste. Serve warm.
