Creamy Cucumber Salad

Serves 6

4 medium cucumbers (finely sliced)

½ medium yellow onion (chopped)

½ cup mayonnaise (or see recipe: Quick ‘N’ Easy Homemade Mayonnaise)

½ cup sour cream

2 tablespoons finely chopped fresh dill

Juice of ½ lemon

1 tablespoon rice vinegar

Salt and pepper (to taste)

 

  1. If desired, peel cucumbers; otherwise, if skin is thin and edible (i.e. without a waxy texture) leave skin on to create a more colorful salad. Finely slice cucumbers.
  2. Combine sliced cucumbers and chopped onion in a large serving bowl.
  3. In a small bowl, whisk together mayonnaise, sour cream, lemon juice and vinegar.
  4. Pour creamy mixture over cucumbers and onion. Sprinkle with dill. Season with salt and pepper to taste. Toss well.
