Crab Salad

Serves 6

2 pounds cooked jumbo lump crabmeat or imitation crabmeat

1 cup finely chopped celery

½ medium yellow onion (chopped)

1 cup black olives (pitted and sliced)

1 cup mayonnaise (or see recipe: Quick ‘N’ Easy Homemade Mayonnaise)

 

1 clove garlic (minced)

1 tablespoon finely chopped fresh flat-leaf parsley

1 tablespoon finely chopped fresh chives

¼ teaspoon paprika

¼ teaspoon cayenne pepper

Juice of ½ lemon

Salt and pepper (to taste)

Whole wheat crackers (accompaniment)

 

  1. In a large bowl, combine crabmeat, celery, onion, and olives.
  2. In a small bowl, whisk together mayonnaise, garlic, parsley, chives, paprika, cayenne, and lemon juice. Pour dressing over crabmeat mixture. Salt and pepper to taste. Toss well. If desired, serve with crackers.
