Thai Coleslaw Dressing

Yields approximately 1 cup  

3 tablespoons smooth peanut butter

2 tablespoons rice wine vinegar 

3 tablespoons lime juice

3 tablespoons apple juice (or cider)

1 teaspoon granulated sugar

¼ cup dark soy sauce (Tamari)

2 tablespoons red pepper sauce (Tabasco)

1 teaspoon grated fresh ginger  

 

  1. Place peanut butter in a microwave-safe bowl and microwave on high for approximately 10-15 seconds, or until peanut butter has softened.
  2. Whisk in vinegar, lime juice, apple juice, sugar, soy sauce, red pepper sauce, and ginger.
  3. Pour dressing over favorite cabbage mixture or see recipe: Crunchy Thai Coleslaw with Spicy Lime Chicken.
