Classic Caesar Salad Dressing

Yields approximately 1½ cups

¾ cup extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon lemon juice

½ cup heavy cream

1 tablespoon yellow mustard

1 egg yolk

2 anchovy fillets (minced)

1 clove garlic (minced)

½ teaspoon onion powder

Salt and pepper (to taste)

 

  1. In a bowl, whisk together oil, vinegar, lemon juice, cream, mustard, yolk, anchovies, garlic, and onion powder. Salt and pepper to taste.
  2. Pour dressing over favorite salad (or see recipe: Classic Caesar Salad under Fresh Garden Salads).
