Quick ‘N’ Easy Homemade Mayonnaise

 

Yields approximately 2 cups

1 cup canola oil

1 cup extra virgin olive oil

1 large egg

1 egg yolk

1 tablespoon honey

1 teaspoon dry mustard

1 tablespoon distilled white vinegar

1 tablespoon lemon juice

½ teaspoon salt

 

  1. Using an electric mixer, beat egg, egg yolk, honey, mustard, vinegar, lemon juice, and salt in a bowl.
  2. Gradually drizzle canola and olive oils into bowl, beating constantly until mixture is thick and creamy. Cover and refrigerate until chilled.
