Italian Salad Dressing

 

Yields approximately 1½ cups

1 cup extra virgin olive oil

½ cup red wine vinegar

1 tablespoon lemon juice

2 cloves garlic (minced)

1 teaspoon granulated sugar

1 tablespoon capers (finely chopped)

½ teaspoon dried parsley  

½ teaspoon dried oregano

½ teaspoon dried thyme

½ teaspoon dried basil

½ teaspoon dried rosemary

½ teaspoon onion powder

¼ teaspoon paprika

Salt and pepper (to taste)

  1. In a bowl, whisk together oil, vinegar, lemon juice, garlic, sugar, capers, herbs, onion powder, and paprika. Salt and pepper to taste.
  2. Pour dressing over favorite garden salad, coleslaw, or pasta salad (or see recipe: Italian Pasta Salad with Prosciutto and Salami under Pasta and Pasta Salads).
