Zesty Coleslaw

Serves 6

3 cups shredded green cabbage

 

1 cup shredded red cabbage

2 cups shredded carrots

1 medium yellow onion (finely chopped)

¾ cup mayonnaise

1 tablespoon lemon juice

2 tablespoons apple cider vinegar

¼ cup yellow mustard

1 cup granulated sugar

1 teaspoon cayenne pepper

½ teaspoon red pepper flakes

Salt and pepper (to taste)

 

  1. In a large bowl, combine green and red cabbage, carrots, and onion.
  2. In a small bowl, whisk together mayonnaise, lemon juice, apple cider vinegar, mustard, sugar, cayenne pepper, and red pepper flakes. Salt and pepper to taste.  
  3. Pour dressing over cabbage mixture. Toss well. Cover and refrigerate until chilled and ready to serve.
