Grilled Calamari

Serves 4

1½ pounds cleaned squid

¼ cup olive oil

1 tablespoon lemon juice

2 cloves garlic (minced)

½ teaspoon crushed red chili pepper flakes

Salt and pepper (to taste)

Lemon wedges (if desired)

 

  1. In a bowl, whisk together oil, lemon juice, garlic, and red pepper flakes. Season with salt and pepper to taste. Add squid, cover, and refrigerate for up to 30 minutes.
  2. Remove squid from refrigerator and allow to rest at room temperature for approximately 5 minutes.
  3. Preheat grill.
  4. Arrange marinated squid on hot, oiled grill grate. Grill until opaque and cooked through, approximately 2-3 minutes per side.
  5. If desired, serve with lemon wedges.
