Grilled Brazilian Sea Bass

Serves 6

6 (4-5-ounce) sea bass fillets

 

Coconut Milk Marinade:

1½ cups unsweetened coconut milk

1 tablespoon lime juice

1 tablespoon olive oil

1 teaspoon finely chopped fresh cilantro

1 teaspoon finely chopped fresh mint

1 teaspoon finely chopped fresh flat-leaf parsley

1 teaspoon finely chopped fresh tarragon

1 teaspoon finely chopped fresh oregano

1 teaspoon finely chopped fresh basil

1 clove garlic (minced)

1 teaspoon grated fresh ginger

Salt and pepper (to taste)

 

  1. To prepare marinade, whisk together all ingredients in a bowl. Place fillets in marinade, cover, and refrigerate for up to 30 minutes.
  2. Remove from refrigerator and allow fillets to sit at room temperature for approximately 5 minutes.
  3. Preheat grill.
  4. Place marinated fillets on hot, oiled grill grate. Grill for approximately 3-4 minutes per side, or until thoroughly cooked.
