Smoked BBQ Duck

Serves 4

2 (2-pound) ducks

Olive oil (for coating)

Favorite dry rub (or see recipes under Dry Rubs, bastes, Sauces & Marinades)

Favorite BBQ sauce (or see recipes under Dry Rubs, bastes, Sauces & Marinades)

 

  1. Coat ducks with a thin layer of oil. Apply a generous amount of dry rub evenly over ducks and inside cavities, massaging well to coat. Place ducks on a baking sheet, cover, and refrigerate overnight.
  2. Remove from refrigerator and allow ducks to sit at room temperature for approximately 20 minutes.
  3. Prepare smoker according to directions listed by manufacturer.
  4. Place ducks in smoker and cook (at about 225° F) until well-done, approximately 30 minutes per pound, or a total of about 2 hours. (Meat thermometer should read approximately 175° F when inserted into thigh). Glaze ducks with BBQ sauce about every 40 minutes.
