Simple Lemon Grilled Chicken Breasts

Serves 6

6 bone-in chicken breast halves (skin on)

½ cup olive oil (plus extra to coat)

½ cup lemon juice

Salt and pepper (to taste)

 

  1. Brush chicken breast halves with a thin layer of olive oil. Season with salt and pepper.
  2. In a bowl, combine oil and lemon juice. Mix well.
  3. Preheat grill.
  4. Arrange chicken on hot, oiled grill grate, skin side down. Grill until well-done, approximately 30 minutes, turning and basting with oil and lemon mixture every 5-10 minutes. When done, meat thermometer should read about 175° F in the thickest part of meat.
