Grilled Lamb Chops

Serves 6

 

6 (¾-inch thick) lamb chops

½ cup white wine vinegar

½ cup olive oil

¼ cup dry white wine

1 tablespoon lemon juice

2 cloves garlic (minced)

1 teaspoon dried oregano

2 teaspoons finely chopped fresh rosemary

2 anchovy fillets

3 kalamata olives (pitted) 

¼ teaspoon freshly ground black pepper 

 

  1. In a blender, combine vinegar, oil, wine, lemon juice, garlic, oregano, rosemary, anchovies, olives, and pepper. Process until smooth. Transfer to a baking dish. Add chops, cover, and refrigerate for approximately 2-3 hours.
  2. Remove from refrigerator and allow marinated chops to sit at room temperature for approximately 20 minutes.
  3. Preheat grill.
  4. Arrange chops on hot, oiled grill grate. Cook for approximately 4-6 minutes per side for medium-rare.
