Grilled Corn on the Cob with Sweet Cream Garlic-Butter

Serves 6

6 ears corn (in husk)

2 sticks sweet cream butter, unsalted (at room temperature)

3 cloves garlic (minced)

2 tablespoons finely chopped fresh chives

½ teaspoon sweet Hungarian paprika

Salt and pepper (to taste)

1. Soak corn in a pot of water for approximately 1 hour.
2. Preheat grill.
3. To prepare seasoned butter, combine butter, garlic, chives, and paprika in a food processor. Process until smooth. Season with salt and pepper to taste. Transfer to a small serving bowl.
4. Place corn on hot, oiled grill grate. Cover and cook, turning often, for approximately 30 minutes, or until kernels are tender. Remove from heat. Carefully peel back husks and remove corn silk.   
5. Spread seasoned butter generously over warm corn.
