Pizza Sauce

Yields approximately 1˝ cups

1 cup tomato sauce

˝ cup tomato paste

2 tablespoons olive oil

˝ medium yellow onion (finely chopped)

4 cloves garlic (minced)

2 tablespoons finely chopped fresh basil

1 tablespoon finely chopped fresh flat-leaf parsley

1 teaspoon granulated sugar

˝ teaspoon dried oregano

˝ teaspoon dried thyme

˝ teaspoon dried rosemary

2 anchovy fillets (minced)

Salt and pepper (to taste)  

 

  1. In a saucepan, heat oil. Add onion and garlic and sauté until translucent. Stir in remaining ingredients. Bring to a simmer, stirring frequently, for approximately 5-8 minutes, or until sauce thickens to desired consistency.
  2. Remove from heat. Season with salt and pepper to taste.
