Pineapple BBQ Sauce

Yields approximately 2 cups

2 (4-ounce) cans pineapple chunks

½ cup Dijon mustard

½ cup honey

3 tablespoons white wine vinegar

1 tablespoon soy sauce

2 tablespoons brown sugar

½ teaspoon ground ginger

Salt and pepper (to taste)

 

  1. In a non-reactive saucepan, combine pineapple, mustard, honey, vinegar, soy sauce, sugar, and ginger. Simmer over low heat, stirring frequently, until sugar dissolves and sauce thickens, approximately 8-10 minutes. Remove from heat.
  2. Transfer to a blender. Process until smooth. Strain, if desired. Salt and pepper to taste.
