Teriyaki Marinade

Yields approximately 1½ cups

¾ cup mirin (sweet Japanese rice wine)

¾ cup dark soy sauce (Tamari)

1 clove garlic (minced)

1 teaspoon grated fresh ginger

3 tablespoons brown sugar

2 pounds meat, seafood, or vegetables 

 

  1. In a saucepan, combine mirin, soy sauce, and brown sugar. Simmer over medium heat, stirring constantly, until sugar dissolves and mixture becomes thick. Remove from heat. Allow to cool completely. Transfer to a bowl.
  2. Add meat, seafood, or vegetables. Cover and refrigerate for approximately 2-3 hours for meat, up to 30 minutes for seafood, or up to 1 hour for vegetables.
