Sweet and Savory BBQ Marinade

 

Yields approximately 3 cups

¾ cup olive oil

¾ cup soy sauce

1 tablespoon Dijon mustard

¼ cup Worcestershire sauce

¼ cup lemon juice

¼ cup red wine vinegar

½ cup brown sugar

1 tablespoon molasses

1 tablespoon garlic powder

1 tablespoon onion powder

¼ teaspoon cayenne pepper

¼ teaspoon ground cinnamon

½ teaspoon red pepper sauce (Tabasco)

½ teaspoon liquid smoke

Salt and pepper (to taste)

4 pounds meat, seafood, or vegetables 

 

  1. In a bowl, whisk together all ingredients. Season with salt and pepper to taste.
  2. Add meat, seafood, or vegetables. Cover and refrigerate for approximately 2-3 hours for meat, up to 30 minutes for seafood, or up to 1 hour for vegetables.
  3. If desired, boil marinade in a non-reactive saucepan, stirring frequently, until thickened for a quick and easy glaze. Brush glaze over cooked meat just before serving, or use as a dipping sauce.
