Coconut Milk Marinade

Yields approximately 1½ cups

1½ cups unsweetened coconut milk

1 tablespoon lime juice

1 tablespoon olive oil

1 teaspoon finely chopped fresh cilantro

1 teaspoon finely chopped fresh mint

1 teaspoon finely chopped fresh flat-leaf parsley

1 teaspoon finely chopped fresh tarragon

1 teaspoon finely chopped fresh oregano

1 teaspoon finely chopped fresh basil

1 clove garlic (minced)

1 teaspoon grated fresh ginger

Salt and pepper (to taste)

2 pounds poultry or seafood

 

  1. In a small combine, whisk together all ingredients. Season with salt and pepper to taste.
  2. Add poultry or seafood. Cover and refrigerate for approximately 2-3 hours for poultry and up to 30 minutes for seafood
