Cranberry-Apple Cobbler Serves 6 Cranberry-Apple Mixture: 2 cups fresh whole cranberries 2 cups sliced apples (peeled) ¼ cup orange juice 1 cup granulated sugar 2 tablespoons quick-cooking tapioca 1 teaspoon lemon zest 3 tablespoons butter 1 teaspoon pure orange extract ½ teaspoon ground cinnamon ¼ teaspoon ground nutmeg ¼ teaspoon salt
Dough: 1 cup all-purpose flour 2 teaspoons baking powder 1 tablespoon granulated sugar ¼ cup milk ¼ cup pure vegetable oil 1 large egg (beaten) 1 teaspoon pure almond extract ½ teaspoon salt
