Blueberry-Peach Cobbler Serves 6 Blueberry-Peach Mixture: 2 cups blueberries 2 cups sliced peaches (peeled) ¼ cup water ¾ cup granulated sugar 2 tablespoons quick-cooking tapioca 1 tablespoon lemon juice 3 tablespoons butter 1 teaspoon pure vanilla extract ½ teaspoon ground cinnamon ¼ teaspoon ground nutmeg ¼ teaspoon salt
Dough: 1 cup all-purpose flour 2 teaspoons baking powder 1 tablespoon granulated sugar ¼ cup milk ¼ cup pure vegetable oil 1 large egg (beaten) 1 teaspoon pure almond extract ½ teaspoon salt
