Winter Wonderland Parfaits

Yields 4 (12-ounce) parfaits 

2 cups white chocolate pudding

1 cup sweetened shredded coconut

1 cup crumbled coconut macaroons (see recipe: Coconut Macaroons under Cookies)

1 cup chopped macadamia nuts

1 cup yogurt covered raisins

White chocolate shavings (for garnish)

4 yogurt covered pretzels (for garnish)

4 white chocolate covered strawberries (for garnish - see recipe: White Chocolate Covered Strawberries under Candies)

 

1. Fill bottom of each parfait glass with ¼ cup white chocolate pudding. Add ¼ cup shredded coconut, ¼ cup coconut macaroon crumbs, ¼ cup chopped macadamia nuts, and ¼ cup yogurt covered raisins. Top with ¼ cup white chocolate pudding. (Note: Repeat layers, depending on height of parfait glasses, ending with pudding on top). 
2. If desired, garnish each parfait with white chocolate shavings, a yogurt covered pretzel, and a white chocolate covered strawberry. Serve immediately with long-handled spoons.
