Tropical Paradise Parfaits

Yields 4 (12-ounce) parfaits 

2 cups coconut pudding 

½ cup sweetened shredded coconut

1 cup pineapple chunks

1 cup diced mango

1 cup diced papaya 

1 cup favorite granola (or see recipe: Homemade Granola) 

4 maraschino cherries (for garnish)

 

  1. In a bowl, combine coconut pudding and shredded coconut. Mix well. 
  2. Fill bottom of each parfait glass with ¼ cup coconut pudding mixture. Add ¼ cup granola, ¼ cup pineapple chunks, ¼ cup diced mango, and ¼ cup diced papaya. Top with ¼ cup coconut pudding mixture. (Note: Repeat layers, depending on height of parfait glasses, ending with coconut pudding mixture on top). 
  3. If desired, garnish each parfait with a maraschino cherry. Serve immediately with long-handled spoons.
