Banana Split Sundae Parfaits

Yields 4 (12-ounce) parfaits 

1-2 large bananas (sliced)

2 tablespoons butter

¼ cup brown sugar

1 teaspoon ground cinnamon

½ teaspoon ground allspice

¼ teaspoon ground nutmeg

1 teaspoon pure vanilla extract

1 teaspoon pure almond extract

1 pint chocolate ice cream

1 pint vanilla ice cream

1 pint strawberry ice cream

¾ cup chocolate syrup

Whipped cream topping (for garnish - see recipe: Fresh Whipped Cream under Pies)

Chopped roasted peanuts (for garnish)

4 maraschino cherries (for garnish)

 

1. In a frying pan (or skillet) melt butter over medium heat. Add sliced bananas, and cook for approximately 1 minute. Add in brown sugar, cinnamon, allspice, and nutmeg. Cook for an additional 1-2 minutes, stirring occasionally, until sugar dissolves. Remove from heat and stir in vanilla and almond extracts. Allow to cool until slightly warm.
2. Scoop chocolate ice cream into each parfait glass. Add a layer of pan-fried bananas. Add a scoop of vanilla ice cream. Add another layer of pan-fried bananas. Top with a scoop of strawberry ice cream. (Note: Repeat layers, depending on height of parfait glasses). 
3. Drizzle 3 tablespoons of chocolate syrup over each parfait.
4. If desired, top each parfait with a dollop of whipped cream, chopped peanuts, and a maraschino cherry. Serve immediately with long-handled spoons.
