Grilled Peanut Butter Apple Sandwiches  

Serves 4

8 (½-inch thick) green apple slices (cut lengthwise, with skin)

Pure vegetable oil (for brushing)

4 heaping tablespoons creamy or crunchy peanut butter (at room temperature)

Ground cinnamon (for dusting)

Caramel sauce, honey, maple syrup, or agave nectar (for drizzling)

 

  1. Lightly brush apple slices with oil. Arrange slices on hot, oiled grill grate and cook for approximately 3-4 minutes per side, or until slightly tender. Transfer slices onto a serving plate.
  2. While apple slices are warm, spread a generous tablespoon of peanut butter on one slice, and top with another slice, thus making a sandwich. Repeat for remaining slices. Dust with cinnamon.
  3. Drizzle warm caramel sauce, honey, maple syrup, or agave nectar over sandwiches. Serve immediately.
