Grilled Peaches with Spiced Marinade & Vanilla Ice Cream

 

Serves 6

3 large peaches (halved and pitted)

3 tablespoons brandy

1 tablespoon bourbon

1 tablespoon dark rum

2 tablespoons lemon juice

2 tablespoons honey

1 teaspoon ground cinnamon

½ teaspoon ground allspice

¼ teaspoon ground ginger

¼ teaspoon ground cloves

¼ teaspoon ground nutmeg

1 tablespoon pure vegetable oil

6 large scoops vanilla ice cream

6 mint sprigs (for garnish)

 

  1. In a bowl, whisk together brandy, bourbon, rum, lemon juice, honey, spices, and oil. Add peach halves. Marinate for up to 1 hour.
  2. Arrange peaches on hot, oiled grill grate. Cook for approximately 5 minutes per side. Transfer peaches onto serving plates. Add to each a generous scoop of vanilla ice cream on the side. If desired, garnish with mint sprigs.
