Fiesta Salad

Serves 8-10  

3 cups watermelon balls

2½ cups diced mango

2 cups diced apples

Juice of 1 lime

2½ cups pineapple chunks

1½ teaspoons pure red chili pepper powder

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon cayenne pepper

¼ cup brown sugar

½ teaspoon salt

 

  1. In a large serving bowl, combine apples and lime juice (to help prevent oxidation/browning of the fruit). Mix well.   
  2. To the bowl, add watermelon, mango, and pineapple. Toss well.
  3. In a small bowl, combine chili pepper powder, cinnamon, nutmeg, cayenne pepper, brown sugar, and salt. Mix ingredients until well incorporated. Add seasoning mix to the fruit bowl and toss well.  
  4. Refrigerate until ready to serve.
