Exotic Fruit Salad 

Serves 14-16

3 cups diced mango

3 cups diced papaya

2 cups diced guava

2 cups diced passion fruit

2 cups diced Asian pear

2 cups sliced red bananas

1¾ cups pomegranate seeds

2 kiwis (peeled and sliced)

¼ cup agave nectar

¼ cup pineapple juice

2 tablespoons red prickly pear cactus syrup

2 tablespoons açaí juice

1 tablespoon lemon juice

Sprig of fresh mint (for garnish)

 

  1. Combine mango, papaya, guava, passion fruit, Asian pear, red bananas, and pomegranate seeds in a large serving bowl.
  2. In a small bowl, combine agave nectar, pineapple juice, prickly pear syrup, açaí juice, and lemon juice. Mix well. Drizzle dressing over fruit salad. Toss well.
  3. Decorate top of fruit salad with kiwi slices. If desired, garnish with a sprig of fresh mint. Refrigerate until ready to serve.
