Red, White & Blue - Independence Day Popsicles  

Serves 6 (or more depending on the size of the frozen pop molds)

2 cups puréed strawberries (or strawberry nectar)

2 cups sweetened coconut milk

2 cups blueberry juice

 

  1. Fill one-third of each compartment of the frozen pop molds with puréed strawberries or strawberry nectar. Freeze until solid or at least partially frozen.
  2. Remove the pop molds from the freezer, and fill each compartment with coconut milk, leaving one-third of each compartment empty. Freeze until solid or at least partially frozen.
  3. Remove the pop molds from the freezer, and fill the remaining space of each compartment with blueberry juice. Freeze until completely solid.
  4. To loosen popsicles from the molds, dip the molds in hot water for a few seconds. Serve immediately.
