Magnificent Margarita Popsicles

Serves 6 (or more depending on the size of the frozen pop molds)

1 cup pomegranate juice

1 cup freshly squeezed orange juice

½ cup pineapple juice

¾ cup freshly squeezed lime juice

1 teaspoon lime zest

1 teaspoon lemon zest

½ cup sugar

¾ cup orange liqueur

1½ cups tequila

¼ cup agave nectar

1½ teaspoons pure orange extract

Kosher salt (optional)

 

1. In a medium saucepan, combine all juices, lime zest, lemon zest, and sugar. Simmer, stirring frequently, over medium heat until sugar dissolves. Remove from heat and allow mixture to cool completely.
2. Transfer mixture into a blender. Add orange liqueur, tequila, agave nectar, and orange extract. Process until smooth.
3. Pour mixture into each compartment of the frozen pop molds. Freeze until solid.
4. To loosen popsicles from the molds, dip the molds in hot water for a few seconds. If desired, dip each popsicle into a cup of tequila, and sprinkle the moistened popsicle with kosher salt. Serve immediately.
