Coconut Pudding Pie 

Yields 1 (9-inch) pie

1 (9-inch) pre-made pie shell or graham cracker pie shell (see recipe: Single-crust Pie

 

Pastry or Graham Cracker Pie Shell)

3 cups pre-made coconut instant pudding  

Whipped cream topping (see recipe: Fresh Whipped Cream)

Toasted almond slices (for garnish)

Sweetened shredded coconut (for garnish)

 

  1. Pour pudding into pie shell.
  2. Cover pie with a thick layer of whipped cream.
  3. Place pie in freezer for a few hours.
  4. Allow pie to thaw at room temperature for approximately 10 minutes prior to serving. If desired, garnish frozen pie with toasted almonds and shredded coconut.
