Peanut Butter Frosting

Yields frosting for 1 dozen cupcakes

1 cup creamy peanut butter

1 cup confectioners’ sugar

2 tablespoons light corn syrup

3 tablespoons unsalted butter (softened)

½ cup heavy cream

1 teaspoon pure vanilla extract

¼ teaspoon salt

 

1. Combine peanut butter and butter in a bowl. Beat with an electric mixer until smooth. 
2. Gradually beat in confectioners’ sugar.
3. Add corn syrup, cream, vanilla extract, and salt. Beat until frosting is light and creamy.
