Ganache Icing

Yields approximately 1¼ cups

6 ounces dark chocolate (finely chopped)

½ cup heavy cream

1 teaspoon pure vanilla extract

 

  1. Place chocolate in a bowl and set aside.
  2. In a small saucepan, bring heavy cream to a boil. Remove from heat and pour over bowl of chocolate. Let stand for 1-2 minutes. Whisk until smooth.
  3. Stir in vanilla extract.
