Quick ‘N’ Easy Irresistible Peanut Butter Fudge

Yields 16-20 pieces

1 (16-ounce) package confectioners’ sugar (sifted)

1¼ cups chunky peanut butter

¼ cup honey or maple syrup

2 sticks unsalted butter

1 tablespoon pure vanilla extract

¼ teaspoon salt

1. In a large microwave-safe bowl, combine peanut butter and butter. Microwave for 3-4 minutes, stirring occasionally, until melted.
2. Using a wooden spoon, quickly stir in confectioners’ sugar, honey (or maple syrup), vanilla extract, and salt.
3. Pour mixture into a greased 8-inch square pan lined with greased parchment or wax paper. Evenly spread out fudge with a wooden spoon or greased spatula. Cover top of fudge with greased parchment or wax paper. Refrigerate until firm.
4. Remove paper. Cut fudge into squares with a sharp, greased knife. Serving suggestions: Place fudge in a decorative tin, or wrap in colorful cellophane and tie with a bow - makes a great gift!
