Mediterranean-style Garlic Bread

Serves 6

4 garlic cloves (crushed)

½ cup extra virgin olive oil

¼ cup fresh flat-leaf parsley (finely chopped)

¼ cup fresh oregano leaves (finely chopped)

¼ cup fresh basil leaves (finely chopped)

¼ cup grated Parmesan cheese (Parmigiano-Reggiano)

¼ teaspoon fresh ground black pepper

1 loaf ciabatta bread

¼ cup finely chopped kalamata olives

  1. In a small saucepan, combine olive oil and garlic. Place over low heat, stirring frequently, for 3-4 minutes to allow oil to infuse with garlic flavor. Remove from heat. Add parsley, oregano, basil, cheese, and pepper. Mix well.
  2. Cut loaf in half, lengthwise. Toast under a broiler or place on a grill until golden brown.
  3. Brush garlic oil mixture evenly over both halves. Top with olives. Serve immediately.
