American Cheese-Onion Biscuits

Serves 12

4 cups all-purpose flour

2 tablespoons baking powder

1 teaspoon baking soda

1 stick cold, unsalted butter (cubed, plus extra for brushing tops)

1½ cups buttermilk

½ cup grated (yellow or white) American cheese

½ cup finely chopped green onions

2 teaspoons granulated sugar

¾ teaspoon salt

  1. Preheat oven to 400° F.
  2. Sift flour, baking powder, baking soda, sugar, and salt into a bowl.
  3. Add cold butter, and quickly mix by hand or use a pastry blender/cutter until mixture is grainy. Add buttermilk, cheese, and onions. Fold in dry ingredients. Avoid over mixing. 
  4. Transfer dough onto a floured working surface. Knead quickly. Layer dough by folding it over itself several times. Using a floured rolling pin, roll out dough to a thickness of approximately ½-inch. Cut dough with a floured 3-inch round cutter.
  5. Place cutout dough onto a greased baking sheet. Brush tops with melted butter.
  6. Bake at 400° F for approximately 15 minutes, or until biscuits are golden brown. Serve immediately.
