Pineapple Rum Punch

Serves 14-16

2 cups pineapple chunks (fresh, frozen or canned)

2 cups pineapple juice

2 cups pineapple sherbet

2 cups pineapple-flavored rum

1 cup coconut-flavored rum

1 cup sweetened coconut milk

6 cups sparkling ginger ale (chilled)

  1. In a blender, combine pineapple, pineapple juice, and sherbet. Process until smooth. Transfer mixture into a large punch bowl.
  2. To the bowl, add both kinds of rum, and coconut milk. Stir well. Refrigerate until chilled.
  3. Just prior to serving, add ginger ale. Stir well. Serve immediately.
