Horchata

Serves 16

2 cups white rice

3½ cups raw almonds

1 cup sweetened condensed milk

8 cups hot water

8 cups cold water

1 cup superfine granulated sugar

1 teaspoon ground cinnamon

1 teaspoon pure vanilla extract

  1. Place rice in a spice or coffee grinder, and pulverize until fine.
  2. In a pitcher or large bowl, combine ground rice, almonds, and cinnamon. Add hot water. Cover and let stand overnight.
  3. In a blender, combine rice mixture (in batches) with cold water. Pulverize until smooth. Strain mixture into a large punch bowl. Add sweetened condensed milk, sugar, and vanilla extract. Stir well. Serve over ice.
