Peach Lemonade

Serves 4-6

1½ cups freshly squeezed lemon juice

4 cups water

½ cup granulated sugar

1 tablespoon lemon zest

1 (15-oz.) can sliced peaches in heavy syrup

Fresh peach slices (for garnish)

Mint sprigs (for garnish)

Ice cubes

  1. In a medium saucepan, bring water and sugar to a boil. Reduce heat and add lemon zest and sliced canned peaches, including the heavy syrup. Simmer uncovered, stirring frequently, until the sugar dissolves. Cool and then puree in a blender. Strain the mixture into a pitcher.
  2. Add lemon juice to the pitcher. Stir well.
  3. Refrigerate until ready to serve. Pour over ice. If desired, garnish each serving glass with a peach slice and a sprig of mint.
