Potato Pancakes

Yields approximately 16 pancakes

3 large Russet potatoes (peeled and grated)

1 medium yellow onion (grated)

1 large egg (beaten)

2 tablespoons all-purpose flour

Salt and pepper (to taste)

Pure vegetable oil

Applesauce (optional)

Sour cream (optional)

Granulated sugar (optional)

 

  1. In a bowl, combine potatoes, onion, and egg. Add flour (use more or less to reach desired consistency). Mix well. Season with salt and pepper to taste.
  2. Heat oil in a frying pan (or skillet). Drop a scoopful of mixture into hot oil, and flatten into a disk. Fry until crisp and golden brown on both sides. If desired, serve with applesauce, sour cream, or sprinkle with sugar.
