Jalapeño Poppers

Yields 1 dozen jalapeño poppers

12 jalapeño peppers

1 (8-ounce) package cream cheese (at room temperature)

1 cup seasoned bread crumbs

½ cup all-purpose flour

2 large eggs

1 tablespoon whole milk

  1. Preheat oven to 350º F.
  2. In bowl, combine bread crumbs and flour. Mix well. In a separate bowl, beat together eggs and milk.  
  3. Cut off stems of peppers. Cut a slit into each pepper lengthwise from end to end. Carefully scoop out seeds and membranes.
  4. Stuff each pepper with cheese.
  5. Dip each stuffed pepper in egg mixture and then toss in bread crumb mixture.
  6. Place stuffed and coated peppers (slit side up) onto a greased baking pan. Bake at 350º F until peppers are tender and coating is golden brown, approximately 25-30 minutes. Serve warm.
