Nacho Cheese Dip

Serves 6-8

½ cup grated sharp cheddar cheese

½ cup grated pepper jack cheese

1 cup cubed Velveeta cheese

1 cup black olives (pitted and sliced)

1 cup diced tomatoes

½ medium yellow onion (chopped)

1 (15-ounce) can refried pinto beans

1 (8-ounce) package cream cheese (at room temperature)

¼ cup finely sliced green onions

1 tablespoon finely chopped fresh cilantro

1 (16-ounce) bag tortilla chips

 

  1. Preheat oven to 350º F.
  2. Place beans in a baking dish. Spread evenly. Layer with cream cheese. Add black olives, tomatoes, and yellow onion. Top with cheddar, pepper jack, and Velveeta cheese. Bake at 350º F until cheese is melted and begins to bubble. Garnish with green onions and cilantro.
  3. Serve with tortilla chips.
