French Onion Dip

Serves 6-8

4½ cups chopped yellow onion

¼ cup olive oil

4 cups sour cream

3½ cups mayonnaise

1 teaspoon garlic powder

1 tablespoon finely chopped fresh chives

Salt and white pepper (to taste)

1 (16-ounce) bag potato chips

 

  1. In a frying pan (or skillet), heat oil and sauté onion until caramelized. Remove from heat and allow to cool completely.
  2. In a bowl whisk together sour cream, mayonnaise, garlic powder, and chives. Fold in onions. Season with salt and white pepper to taste. Mix well. Refrigerate until chilled. Serve with potato chips.
