Creamy Citrus Dip

Yields approximately 2 cups

1 cup canola oil

1 cup extra virgin olive oil

1 large egg

1 egg yolk

1 tablespoon honey

1 teaspoon dry mustard

2 cloves garlic (minced) 

Juice of 1 lemon

Juice of ½ lime

1 tablespoon orange juice

¼ teaspoon paprika

Salt and pepper (to taste)

 

  1. Using an electric mixer, beat egg, egg yolk, honey, mustard, garlic, lemon juice, lime juice, orange juice, and paprika in a bowl.
  2. Gradually drizzle canola and olive oils into bowl, beating constantly until mixture is thick and creamy. Season with salt and pepper to taste. Cover and refrigerate until chilled.
