Chunky Bean Dip

 

Serves 6-8

2 (15-ounce) cans refried pinto beans

1 (15-ounce) can black beans (drained)

1 ripe avocado (mashed)

Juice of 1 lime

3 tomatoes (diced)

1 medium yellow onion (chopped)

2 cloves garlic (minced)

½ cup finely chopped fresh cilantro

1½ cups grated sharp cheddar cheese

1 (4-ounce) can roasted green chilies (diced)

½ teaspoon red pepper sauce (Tabasco)

½ teaspoon ground cumin

Salt and pepper (to taste)

1 (16-ounce) bag tortilla chips

 

  1. In a bowl, combine avocado and lime juice. Mix well. Add beans, tomatoes, onion, garlic, cilantro, cheese, green chilies, red pepper sauce, and ground cumin. Season with salt and pepper to taste. Mix well. 
  2. Serve with tortilla chips.
